We do our best to filter our sap but sometimes we still end up with a bit of sugar sand. What is sugar sand? It is a concentration of minerals and nutrients that collect as the excess water is boiled away. It is perfectly harmless and can be consumed.

It settles at the bottom of the container and stays there unless you want to try some! Most bottles contain no sugar sand or very little.

Why is maple syrup different colors?

The main reason is the time of season when the syrup is made. Early sap extracted from the trees tends to produce a very light ‘fine’ syrup. As the spring warms up, the sap coming from the trees produces a darker syrup with a stronger flavor. The length and techniques used to boil the sap also influences the color and flavor. Nothing tastier than traditional wood fired maple syrup!
